  • 1 large carrot, diced

  • 4 cups chicken broth
  • 2 cans (10.5 oz each) condensed cream of chicken soup
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 4 cups shredded cooked chicken (about 1 lb)
  • 2 cups bisquick baking mix (8 oz)
  • 2/3 cup whole milk
  • Chopped fresh parsley, optional

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced carrot and celery to the pot, sauté until they soften, about 3-5 minutes.
  3. Pour in the chicken broth and the condensed cream of chicken soup. Stir well to combine.
  4. Season the mixture with onion powder and garlic powder, then bring it to a simmer.
  5. Once simmering, add the shredded chicken and warm through for about 5 minutes.
  6. While the chicken is heating, combine the bisquick baking mix and milk in a bowl until a dough forms.
  7. Drop spoonfuls of the dough into the simmering broth, ensuring they are spread out evenly.
  8. Cover the pot and let the dumplings cook for 15-20 minutes until fluffy and cooked through.

Notes

For added depth of flavor, consider using homemade chicken broth. Experiment with spices like paprika or thyme for a twist.
