Description

A tender beef dish slow-cooked in a rich, savory Korean sauce, perfect for busy weeknights.


Ingredients

  • 2 lbs beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup beef broth
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon cornstarch (optional for thickening)
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Cut the beef into large chunks and place them in the slow cooker.
  2. In a bowl, mix together the soy sauce, brown sugar, beef broth, rice vinegar, sesame oil, garlic, and ginger. Pour this mixture over the beef.
  3. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is fork-tender.
  4. If you desire a thicker sauce, mix cornstarch with a little cold water, then stir it into the slow cooker during the last 30 minutes of cooking.
  5. Once finished, shred the beef with two forks and mix it back into the savory sauce.
  6. Serve over rice and garnish with green onions and sesame seeds for a beautiful presentation.

Notes

For added depth of flavor, consider marinating your beef in the sauce overnight before cooking. Serve over rice or noodles, and pair with a side salad or steamed vegetables.
