Crispy on the outside and tender on the inside, these Parmesan Herb Roasted Potatoes are bursting with flavor and make for a perfect side dish for any meal.
Ingredients

- 2 pounds baby potatoes (red or yellow)
- 3 tablespoons olive oil
- 1 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and halve the baby potatoes for even cooking.
- In a large bowl, toss potatoes with olive oil, garlic powder, rosemary, thyme, salt, and pepper.
- Spread potatoes in a single layer on the baking sheet.
- Roast for 25 minutes, sprinkle Parmesan over the potatoes, toss gently, and roast for another 10-15 minutes until golden and crispy.
- Remove from oven, garnish with fresh parsley if desired, and let rest for 5 minutes before serving.
Notes
Leftovers can be stored in an airtight container for 3-4 days. Reheat in a 375°F oven or air fryer for best results.
