A quick and easy comfort dish that combines chicken, creamy cheeses, and pasta all cooked in one pot.
Ingredients

- 1 pound of chicken breasts, diced
- 2 tablespoons olive oil
- 3 garlic cloves, finely chopped
- 1 teaspoon dried Italian herbs
- A sprinkle of salt and pepper
- 12 oz penne or rotini noodles
- 1 cup marinara sauce
- 4 cups chicken stock
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Fresh basil leaves, chopped (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced chicken, chopped garlic, and dried Italian herbs. Season with salt and pepper. Cook for 5-7 minutes until the chicken is no longer pink.
- Add the marinara sauce and penne noodles to the pot. Pour in the chicken stock and stir. Reduce heat to low once bubbling.
- Cover the pot and simmer for 12-15 minutes, stirring occasionally, until noodles are tender and liquid has mostly evaporated.
- Turn off the stove and mix in the mozzarella and grated Parmesan until melted and creamy.
- Serve hot, garnished with basil.
Notes
Always taste as you go to adjust seasonings. Good quality marinara sauce can greatly enhance the flavor.
