One-Pot Chicken Parmesan Pasta

Description

A quick and easy comfort dish that combines chicken, creamy cheeses, and pasta all cooked in one pot.


Ingredients

  • 1 pound of chicken breasts, diced
  • 2 tablespoons olive oil
  • 3 garlic cloves, finely chopped
  • 1 teaspoon dried Italian herbs
  • A sprinkle of salt and pepper
  • 12 oz penne or rotini noodles
  • 1 cup marinara sauce
  • 4 cups chicken stock
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh basil leaves, chopped (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced chicken, chopped garlic, and dried Italian herbs. Season with salt and pepper. Cook for 5-7 minutes until the chicken is no longer pink.
  2. Add the marinara sauce and penne noodles to the pot. Pour in the chicken stock and stir. Reduce heat to low once bubbling.
  3. Cover the pot and simmer for 12-15 minutes, stirring occasionally, until noodles are tender and liquid has mostly evaporated.
  4. Turn off the stove and mix in the mozzarella and grated Parmesan until melted and creamy.
  5. Serve hot, garnished with basil.

Notes

Always taste as you go to adjust seasonings. Good quality marinara sauce can greatly enhance the flavor.
