Kiwi Blueberry Mojito Cocktail

Description

A refreshing cocktail combining the vibrant flavors of kiwi and blueberry, uplifted by fresh lime juice and mint.


Ingredients

  • 6 kiwis, peeled and cut into halves or quarters
  • 4 kiwis, peeled and sliced for garnish
  • 170 grams blueberries, crushed
  • 170 grams blueberries, whole for garnish
  • 60 millilitres fresh lime juice (from 1 to 2 limes)
  • 100 grams granulated sugar, or to taste
  • 35 grams fresh mint leaves
  • 360–480 millilitres sparkling water
  • 250–375 millilitres white rum
  • Ice cubes, as needed
  • Blue and/or green decorating sugar for glass rims

Instructions

  1. In a small food processor, combine the halved or quartered kiwis, sugar, and lime juice. Pulse until a coarse puree forms.
  2. Transfer the kiwi puree into a large bowl or pitcher. Gradually incorporate the rum, starting with 250 millilitres and adjusting to your taste.
  3. Gently crush 170 grams of blueberries using a muddler and set them aside for later use.
  4. To prepare the glasses, rub a lime wedge around the rim. Dip the moistened rims into the blue or green decorating sugar.
  5. In a pitcher, layer the kiwi puree, add ice, a generous handful of mint leaves, and kiwi slices. For creativity, add crushed blueberries and more mint leaves.
  6. Top off with sparkling water and stir briefly. Adjust the proportions of rum, sugar, or water to your preference.
  7. In individual glasses, add whole blueberries, layer ice and mint leaves, and pour the kiwi-rum mixture followed by sparkling water.

Notes

Customize the sweetness and rum levels to your liking. This cocktail is great for summer gatherings and can be made alcohol-free.
