- 4 pork chops (bone-in or boneless, about 1–1½ inches thick)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, melted
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme (or Italian seasoning)
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
- ¼ cup chicken broth
- 2 tablespoons grated Parmesan cheese
- Fresh parsley or thyme, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- Pat the pork chops dry with a paper towel. Season both sides generously with salt, pepper, paprika, and thyme.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until they are golden brown. Transfer the seared pork chops to the prepared baking dish.
- In the same skillet, add the sliced onions. Cook for 4–5 minutes until they soften, then stir in the minced garlic and cook for an additional 30 seconds.
- Spoon the onion-garlic mixture evenly over the pork chops. Pour the chicken broth into the dish and drizzle with the melted butter.
- Bake uncovered for 25–30 minutes or until the pork chops are tender and cooked through.
- During the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the top of the chops and return to the oven.
- Once cooked, let the pork chops rest for 5 minutes before serving. Garnish with freshly chopped parsley or thyme.
Notes
For a lighter option, use olive oil spray. Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
