Instructions
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper. Sear them in the skillet until golden brown on both sides and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream, stirring to combine. Then, add the sun-dried tomatoes and Italian seasoning.
- Bring the mixture to a simmer, then stir in the fresh spinach until wilted.
- Return the chicken to the skillet and coat it thoroughly with the creamy sauce.
- Serve warm, topped with grated Parmesan cheese.
