Description

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, grated (for serving)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken breasts with salt and pepper. Sear them in the skillet until golden brown on both sides and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream, stirring to combine. Then, add the sun-dried tomatoes and Italian seasoning.
  6. Bring the mixture to a simmer, then stir in the fresh spinach until wilted.
  7. Return the chicken to the skillet and coat it thoroughly with the creamy sauce.
  8. Serve warm, topped with grated Parmesan cheese.
