Description

A vibrant and refreshing salad combining shrimp, avocado, and lime for a quick and nutritious meal.


Ingredients

  • 1 lb jumbo cooked, peeled shrimp, chopped
  • 1 medium tomato, diced
  • 1 medium Hass avocado, diced (about 5 oz)
  • 1/4 cup chopped red onion
  • 1 jalapeno, seeds removed, diced fine
  • 1 tbsp chopped cilantro
  • 2 limes, juice of
  • 1 tsp olive oil
  • 1/4 tsp kosher salt
  • Black pepper to taste

Instructions

  1. In a large bowl, combine shrimp, tomato, avocado, red onion, jalapeno, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  3. Pour dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for 30 minutes before serving for flavors to meld.

Notes

Consider adding black beans or corn for a heartier dish. To avoid avocado browning, drizzle lime juice over it immediately after cutting.
