- 2 limes, juice of
- 1 tsp olive oil

- Black pepper to taste
Instructions
- In a large bowl, combine shrimp, tomato, avocado, red onion, jalapeno, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
- Pour dressing over the salad and toss gently to combine.
- Serve immediately or chill for 30 minutes before serving for flavors to meld.
Notes
Consider adding black beans or corn for a heartier dish. To avoid avocado browning, drizzle lime juice over it immediately after cutting.
