Ingredients

  • 1 pound cod fillets, cut into bite-sized pieces
  • 1 cup breadcrumbs
  • 1/2 cup cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 egg, beaten
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 cup mayonnaise
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F or heat oil in a skillet over medium-high heat.
  2. In a mixing bowl, combine breadcrumbs, cornmeal, paprika, garlic powder, salt, and pepper. Whisk until well mixed.
  3. Dip each cod piece into the beaten egg, then roll in the breadcrumb mixture until well-coated.
  4. For baking, place the coated cod bites on a baking sheet and bake for 12-15 minutes until golden brown. For frying, cook for 2-3 minutes on each side.
  5. While cod is cooking, mix mayo, minced garlic, lemon juice, and lemon zest in a bowl.

Notes

Let cod bites rest after cooking to drain excess oil. Store leftovers in the fridge for up to 2 days.
