- 1 pound cod fillets, cut into bite-sized pieces
- 1 cup breadcrumbs
- 1/2 cup cornmeal
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 egg, beaten
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/2 cup mayonnaise
- Zest of 1 lemon
Instructions
- Preheat your oven to 400°F or heat oil in a skillet over medium-high heat.
- In a mixing bowl, combine breadcrumbs, cornmeal, paprika, garlic powder, salt, and pepper. Whisk until well mixed.
- Dip each cod piece into the beaten egg, then roll in the breadcrumb mixture until well-coated.
- For baking, place the coated cod bites on a baking sheet and bake for 12-15 minutes until golden brown. For frying, cook for 2-3 minutes on each side.
- While cod is cooking, mix mayo, minced garlic, lemon juice, and lemon zest in a bowl.
Notes
Let cod bites rest after cooking to drain excess oil. Store leftovers in the fridge for up to 2 days.
