  • 3/4 cup brown sugar, packed

  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  5. Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
  6. Scoop rounded tablespoons of dough onto the prepared pans, spacing about 2 inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
  7. Let cookies cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Optionally, warm in the microwave for a soft treat.
