- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
- Add chicken broth, scraping up any brown bits from the skillet. Bring this mixture to a simmer.
- Stir in the heavy cream, sun-dried tomatoes, spinach, and Italian seasoning. Mix well to combine.
- Return the chicken to the skillet. Cover it and simmer for 10-15 minutes until the chicken is cooked through and the sauce has thickened.
- Serve the dish with grated Parmesan cheese and fresh basil on top.
Notes
For extra flavor, marinate the chicken in Italian herbs for a few hours before cooking. Use pre-cooked chicken for quicker prep.
