Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  4. Add chicken broth, scraping up any brown bits from the skillet. Bring this mixture to a simmer.
  5. Stir in the heavy cream, sun-dried tomatoes, spinach, and Italian seasoning. Mix well to combine.
  6. Return the chicken to the skillet. Cover it and simmer for 10-15 minutes until the chicken is cooked through and the sauce has thickened.
  7. Serve the dish with grated Parmesan cheese and fresh basil on top.

Notes

For extra flavor, marinate the chicken in Italian herbs for a few hours before cooking. Use pre-cooked chicken for quicker prep.
