A delightful one-pan meal featuring ground turkey, fresh zucchini, and rice in a warm broth, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey
  • 1 medium zucchini, diced
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent.
  2. Add ground turkey and cook until browned.
  3. Stir in diced zucchini and cook for another 3-4 minutes.
  4. Add rice and chicken broth. Stir in Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
  6. Fluff with a fork before serving.

Notes

For added flavor, serve with grated Parmesan cheese or a fresh salad. This dish can also be stored in the fridge for up to 3 days.
