A comforting soup that combines the heartiness of lasagna with the ease of soup, perfect for busy weeknights.


Ingredients

  • 1 package of cheese tortellini
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, sauté the diced onion and minced garlic over medium heat until softened (about 5 minutes).
  2. Add the crushed tomatoes and broth to the pot; bring to a boil.
  3. Stir in the cheese tortellini; cook according to package instructions (3-5 minutes) until al dente.
  4. Incorporate the spinach and Italian seasoning; allow the spinach to wilt.
  5. Season generously with salt and pepper to taste.
  6. Ladle the soup into bowls and top with ricotta, mozzarella, and Parmesan cheese.

Notes

This soup can also be served with a mixed green salad or garlic bread for a complete meal.
