Ingredients

- 1 package of cheese tortellini
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups vegetable or chicken broth
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Grated Parmesan cheese for serving
Instructions
- In a large pot, sauté the diced onion and minced garlic over medium heat until softened (about 5 minutes).
- Add the crushed tomatoes and broth to the pot; bring to a boil.
- Stir in the cheese tortellini; cook according to package instructions (3-5 minutes) until al dente.
- Incorporate the spinach and Italian seasoning; allow the spinach to wilt.
- Season generously with salt and pepper to taste.
- Ladle the soup into bowls and top with ricotta, mozzarella, and Parmesan cheese.
Notes
This soup can also be served with a mixed green salad or garlic bread for a complete meal.
