- 1 lb chicken breast, sliced
- 1/4 cup peanut butter

- Green onions for garnish

Instructions
- Cook the rice noodles according to package instructions. Once done, drain and set aside.
- In a skillet, heat the vegetable oil over medium heat. Add in the sliced chicken and cook until browned and fully cooked through.
- Add the minced garlic and ginger to the skillet, stirring and cooking for an additional minute.
- Incorporate the peanut butter and soy sauce into the mixture, stirring until well combined.
- Toss in the cooked rice noodles, ensuring everything is evenly coated with the sauce.
- Serve garnished with chopped peanuts and sliced green onions over a bed of rice.
Notes
For a vegetarian twist, replace chicken with tofu. Add lime juice for a brighter flavor.
