Description

A delightful dish that combines tender chicken with rich peanut sauce and delicate rice noodles, perfect for quick weeknight dinners.


Ingredients

  • 8 oz rice noodles
  • 1 lb chicken breast, sliced
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1/4 cup peanuts, chopped
  • 1 tbsp vegetable oil
  • Green onions for garnish
  • Rice for serving

Instructions

  1. Cook the rice noodles according to package instructions. Once done, drain and set aside.
  2. In a skillet, heat the vegetable oil over medium heat. Add in the sliced chicken and cook until browned and fully cooked through.
  3. Add the minced garlic and ginger to the skillet, stirring and cooking for an additional minute.
  4. Incorporate the peanut butter and soy sauce into the mixture, stirring until well combined.
  5. Toss in the cooked rice noodles, ensuring everything is evenly coated with the sauce.
  6. Serve garnished with chopped peanuts and sliced green onions over a bed of rice.

Notes

For a vegetarian twist, replace chicken with tofu. Add lime juice for a brighter flavor.
