- 3–4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Rub olive oil over the chicken breasts, then season with salt and pepper.
- In a skillet over medium-high heat, sear the chicken until it’s golden brown on both sides, approximately 5 minutes per side.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Pour in the chicken broth, allowing it to simmer while scraping the bottom of the pan to release the delicious browned bits.
- Stir in the sour cream until the mixture is well combined, letting it bubble for about 5 minutes.
- Top each chicken breast with shredded Jack cheese and then transfer the skillet to the oven.
- Bake for around 15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions and paprika before serving.
Notes
For extra juiciness, consider using skinless thighs or low-fat cheese for a lighter option. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
