Ingredients

  • 3–4 boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil
  • 2–3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • Salt and pepper to taste
  • Chopped green onions and paprika for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts, then season with salt and pepper.
  3. In a skillet over medium-high heat, sear the chicken until it’s golden brown on both sides, approximately 5 minutes per side.
  4. Add the minced garlic and cook for another 30 seconds until fragrant.
  5. Pour in the chicken broth, allowing it to simmer while scraping the bottom of the pan to release the delicious browned bits.
  6. Stir in the sour cream until the mixture is well combined, letting it bubble for about 5 minutes.
  7. Top each chicken breast with shredded Jack cheese and then transfer the skillet to the oven.
  8. Bake for around 15 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and paprika before serving.

Notes

For extra juiciness, consider using skinless thighs or low-fat cheese for a lighter option. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
