- 1/4 cup maple syrup
- 2 tbsp Dijon mustard

Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine maple syrup, Dijon mustard, minced garlic, olive oil, salt, and pepper; mix well.
- Cut the salmon fillets into bite-sized pieces, about 1-2 inches each.
- Place salmon bites in a bowl, pour marinade over them, and toss until well-coated. Let marinate for 10-15 minutes.
- Line a baking sheet with parchment paper and place marinated salmon bites in a single layer. Bake for 12-15 minutes or until they flake easily with a fork.
- In a separate bowl, whisk together additional Dijon mustard, a splash of maple syrup, and a bit of olive oil for the drizzle.
- Once baked, let salmon bites rest for 5 minutes, drizzle with the creamy sauce, and garnish with fresh parsley before serving.
Notes
For a vegan option, substitute salmon with tempeh or tofu marinated in the same sauce. Adjust the seasoning as needed if using different mustard brands.
