- 2 cups Golden Oreo cookies, crushed

- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice (optional)
- 1 cup diced fresh strawberries or 1/4 cup strawberry puree
- 20 Golden Oreo cookies, crushed (for topping)
- 1 (3 oz) box strawberry-flavored gelatin mix or freeze-dried strawberries, crushed into powder
- 4 tablespoons unsalted butter, melted (for topping)
- Whipped cream, for topping
- White chocolate, melted for drizzle
Instructions
- Preheat your oven to 325°F (163°C). Combine 2 cups crushed Golden Oreo cookies, 5 tablespoons melted unsalted butter, and 2 tablespoons granulated sugar. Press into the bottom of an 8×8-inch baking pan and bake for 8-10 minutes until slightly golden.
- Beat 16 ounces of softened cream cheese until smooth. Add 1/2 cup granulated sugar, 1/2 cup sour cream, 1 teaspoon vanilla extract, and optional lemon juice. Mix well. Add the 2 eggs one at a time, blending after each.
- Pour cheesecake mixture over pre-baked crust. Bake at 325°F for 30-35 minutes until edges are set but center is slightly jiggly. Cool in the oven for 1 hour.
- Combine 20 crushed Golden Oreos, 1 (3 oz) box of strawberry gelatin powder, and 4 tablespoons melted butter in a bowl. Mix until crumbly.
- Sprinkle topping evenly over cooled cheesecake surface. Refrigerate for at least 4 hours to fully set.
- Cut into bite-sized squares or use a scoop to form individual bites. Top with whipped cream and drizzle with melted white chocolate before serving.
