Description

Ingredients

  • 4 beef steaks (ribeye, sirloin, or filet mignon)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon dried thyme or Italian seasoning
  • Fresh parsley, finely chopped (for garnish)

Instructions

  1. Pat the steaks dry and generously season with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3–4 minutes on each side, or until they’ve achieved a nice golden crust.
  3. Carefully remove the steaks from the skillet and tent them with aluminum foil to keep warm.
  4. Lower the heat and add butter to the skillet. Once melted and sizzling, toss in the minced garlic and cook until fragrant, about 30 seconds.
  5. Pour in the beef broth, using a wooden spoon to scrape up any flavorful browned bits stuck to the bottom of the pan.
  6. Stir in the heavy cream, thyme, and, if desired, the red pepper flakes. Allow to simmer for 4–6 minutes until it thickens slightly.
  7. Return the steaks to the skillet, spooning the sauce over them. Warm through for another 1–2 minutes.
  8. To finish, garnish with finely chopped parsley before serving.

Notes

Ensure steaks are at room temperature before cooking for even cooking. High-quality beef will enhance the flavor.
