- 4 beef steaks (ribeye, sirloin, or filet mignon)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup beef broth
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon dried thyme or Italian seasoning
- Fresh parsley, finely chopped (for garnish)
Instructions
- Pat the steaks dry and generously season with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3–4 minutes on each side, or until they’ve achieved a nice golden crust.
- Carefully remove the steaks from the skillet and tent them with aluminum foil to keep warm.
- Lower the heat and add butter to the skillet. Once melted and sizzling, toss in the minced garlic and cook until fragrant, about 30 seconds.
- Pour in the beef broth, using a wooden spoon to scrape up any flavorful browned bits stuck to the bottom of the pan.
- Stir in the heavy cream, thyme, and, if desired, the red pepper flakes. Allow to simmer for 4–6 minutes until it thickens slightly.
- Return the steaks to the skillet, spooning the sauce over them. Warm through for another 1–2 minutes.
- To finish, garnish with finely chopped parsley before serving.
Notes
Ensure steaks are at room temperature before cooking for even cooking. High-quality beef will enhance the flavor.
