- 2 cups fresh spinach, roughly chopped
- 4 oz cream cheese, softened
- ½ cup mozzarella cheese, shredded
- ¼ cup parmesan cheese, freshly grated
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ¼ teaspoon red pepper flakes (optional)
- 1 teaspoon salt, divided
- ½ teaspoon black pepper, divided
- 1 tablespoon butter
Instructions
- Preheat oven to 375°F (190°C). Pat chicken breast dry and slice horizontally to create pockets. Pound to an even thickness and season with salt and pepper.
- In a bowl, mix cream cheese, mozzarella, parmesan, minced garlic, and red pepper flakes. Fold in chopped spinach.
- Spoon 2-3 tablespoons of the filling onto each chicken breast, fold over and secure edges.
- Combine Italian seasoning, paprika, onion powder, salt, and pepper; sprinkle over chicken. Heat olive oil and butter in a skillet, sear chicken for 3-4 minutes on each side until golden.
- Transfer skillet to oven and bake for 15-18 minutes until chicken reaches 165°F (74°C). Let rest for 5 minutes before serving.
- Slice diagonally to reveal the filling and drizzle with pan juices.
Notes
Consider using ricotta instead of cream cheese or swapping spinach for other leafy greens. For added flavor, try marinating the chicken in your favorite seasoning mix.
