- 1 box (16 ounces) Lasagna Noodles
- 2 tablespoons Olive Oil
- 1 jar (24 ounces) Marinara Sauce
- 1 ½ cups Shredded Mozzarella Cheese, divided
- ½ cup Grated Parmesan Cheese, divided
- Fresh Basil or Parsley, for garnish (optional)
- 1 container (15 ounces) Whole Milk Ricotta Cheese
- 1 package (10 ounces) Frozen Chopped Spinach, thawed and squeezed very dry
- 1 cup Shredded Mozzarella Cheese
- ¼ cup Grated Parmesan Cheese
- 1 large Egg
- 2 cloves Garlic, minced
- 1 teaspoon Italian Seasoning
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- ⅛ teaspoon Ground Nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Bring a large pot of heavily salted water to a rolling boil.
- Add the lasagna noodles and cook according to the package directions, aiming for al dente.
- Once cooked, carefully drain the noodles and rinse them with cold water.
- Lay the cooked noodles in a single layer on baking sheets or parchment paper, drizzling with olive oil.
- Place the thawed spinach in a towel and squeeze out as much liquid as possible.
- In a large bowl, combine ricotta, spinach, 1 cup of mozzarella, ¼ cup of Parmesan, garlic, egg, Italian seasoning, salt, pepper, and nutmeg.
- Spread 1 cup of marinara sauce over the bottom of a baking dish.
- Lay one lasagna noodle flat, spread about ¼ cup of filling over it, and roll it up tightly.
- Place the rolled noodle seam-side down in the baking dish until all are arranged.
- Spoon remaining marinara sauce on top and sprinkle remaining cheese over it.
- Cover with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for another 10-15 minutes until golden brown.
- Let rest for at least 10 minutes before serving, garnished with basil or parsley.
Notes
These can be made ahead of time and refrigerated until ready to bake. For customization, consider adding veggies or different cheeses.
