Description

A delicious and easy-to-make frittata packed with nutritious spinach and rich feta cheese, perfect for breakfast or brunch.


Ingredients

  • 6 eggs
  • 1 cup fresh spinach, wilted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: chopped onions, bell peppers, or other vegetables

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add any optional vegetables and sauté until soft.
  4. Add the wilted spinach and stir until heated through.
  5. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  6. Pour the egg mixture into the skillet over the sautéed vegetables and spinach.
  7. Sprinkle crumbled feta cheese evenly on top.
  8. Cook on the stovetop for about 5 minutes, or until the edges start to set, then transfer to the oven.
  9. Bake for 15-20 minutes, or until the center is set and the top is lightly golden.
  10. Allow it to cool for a few minutes, slice, and serve warm.

Notes

Serve with a fresh salad or crusty bread. Can be frozen for up to three months.
