Description
A comfort food classic of tender chicken breasts simmered in a creamy sauce, served over fluffy rice.
Ingredients
Scale
- 2 chicken breasts
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become translucent.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until they are browned.
- Pour in the chicken broth and heavy cream. Bring the mixture to a gentle simmer.
- Reduce the heat to low. Cover the skillet and allow the chicken to cook for 15-20 minutes, ensuring that it’s cooked through.
- Serve the chicken and gravy over the cooked rice.
Notes
For a lighter version, substitute heavy cream with coconut milk. For a nutritious twist, consider using quinoa instead of rice.
