- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 lemon, juiced and zested
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook orzo according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add shrimp to the skillet and cook until they are pink and opaque, about 3-4 minutes.
- Stir in cherry tomatoes, lemon juice, and zest; cooking until the tomatoes are slightly softened, about 2 minutes.
- Combine the cooked orzo with the shrimp mixture, and gently fold in the feta cheese and parsley.
- Season with salt and pepper to taste, and serve warm.
Notes
Best served immediately. Can be stored in the refrigerator for up to three days and frozen for up to two months.
