- 1 pound ground beef
- 4 medium potatoes, sliced
- 1 onion, chopped
- 1 cup uncooked rice
- 4 cups beef broth
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Drain excess fat.
- Grease a 9×13 inch baking dish. Layer the sliced potatoes, cooked beef, chopped onions, and uncooked rice.
- Pour beef broth over the layers and season with salt and pepper.
- Cover the dish tightly with aluminum foil and bake for 1 hour.
- Remove foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until cheese melts and potatoes are tender.
- Allow to cool for a few minutes before serving.
Notes
Enhance flavor by browning onions with the beef. Add a sprinkle of red pepper flakes for heat. You can substitute ground turkey or meat substitutes.
