Description

A hearty, comforting casserole combining ground beef, potatoes, rice, and broth, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 1 onion, chopped
  • 1 cup uncooked rice
  • 4 cups beef broth
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Drain excess fat.
  3. Grease a 9×13 inch baking dish. Layer the sliced potatoes, cooked beef, chopped onions, and uncooked rice.
  4. Pour beef broth over the layers and season with salt and pepper.
  5. Cover the dish tightly with aluminum foil and bake for 1 hour.
  6. Remove foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until cheese melts and potatoes are tender.
  7. Allow to cool for a few minutes before serving.

Notes

Enhance flavor by browning onions with the beef. Add a sprinkle of red pepper flakes for heat. You can substitute ground turkey or meat substitutes.
