- 2 pounds beef chuck, cut into chunks
- 1 can (13.5 oz) coconut milk
- 2 tablespoons soy sauce
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon curry powder
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a bit of oil in a large pot over medium-high heat. Season the beef chunks with salt and pepper. Brown the beef on all sides, then remove it from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until they soften and become fragrant.
- Stir in the curry powder and brown sugar, cooking for an additional minute to enhance the flavors.
- Pour in the coconut milk and soy sauce, stirring to combine everything thoroughly.
- Return the browned beef to the pot. Bring the mixture to a gentle simmer.
- Cover and let it braise on low heat for 120-180 minutes, or until the beef is tender and flavors meld beautifully.
- Serve hot, garnished with fresh cilantro for a burst of color and flavor.
Notes
For a vegetarian version, substitute beef with jackfruit or mushrooms. Great served over jasmine or basmati rice.
