Description

Delicious cookies inspired by the classic Girl Scout treat, featuring a buttery base topped with caramel, toasted coconut, and a chocolate drizzle.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup caramel candies
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking sheet to prevent sticking.
  3. In a large bowl, cream together the softened butter and granulated sugar until smooth and fluffy.
  4. Mix in the vanilla extract.
  5. Gradually add the all-purpose flour and salt, stirring until just combined.
  6. Scoop the dough onto the prepared baking sheet and flatten each scoop slightly.
  7. Bake for 10-12 minutes, until the edges are lightly golden.
  8. While cooling, toast the shredded coconut in a dry pan over medium heat until golden brown.
  9. Melt caramel candies with heavy cream in a small saucepan over low heat until smooth.
  10. Spread the caramel mixture over each cooled cookie and sprinkle toasted coconut on top.
  11. Melt the chocolate chips and drizzle over the cookies.
  12. Allow cookies to set before serving.

Notes

For a dairy-free version, consider using coconut oil. Dark chocolate can be used for a richer flavor. Store cookies in an airtight container for up to one week.
