- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 cup sweetened shredded coconut
- 1 cup caramel candies
- 1/4 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a baking sheet to prevent sticking.
- In a large bowl, cream together the softened butter and granulated sugar until smooth and fluffy.
- Mix in the vanilla extract.
- Gradually add the all-purpose flour and salt, stirring until just combined.
- Scoop the dough onto the prepared baking sheet and flatten each scoop slightly.
- Bake for 10-12 minutes, until the edges are lightly golden.
- While cooling, toast the shredded coconut in a dry pan over medium heat until golden brown.
- Melt caramel candies with heavy cream in a small saucepan over low heat until smooth.
- Spread the caramel mixture over each cooled cookie and sprinkle toasted coconut on top.
- Melt the chocolate chips and drizzle over the cookies.
- Allow cookies to set before serving.
Notes
For a dairy-free version, consider using coconut oil. Dark chocolate can be used for a richer flavor. Store cookies in an airtight container for up to one week.
