  • 1 medium pumpkin
  • 2 cups cooked turkey, shredded
  • 1 cup breadcrumbs
  • 1/2 cup onions, chopped
  • 1/2 cup celery, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh sage, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Carefully cut the top off the pumpkin and scoop out the seeds and pulp.
  3. In a skillet, heat olive oil over medium heat. Sauté the onions, celery, and garlic until softened, about 5-7 minutes.
  4. In a large bowl, combine the shredded turkey, sautéed vegetables, breadcrumbs, sage, salt, pepper, and chicken broth. Mix well.
  5. Stuff the pumpkin with the mixture, pressing down gently to pack it in.
  6. Place the stuffed pumpkin on a baking dish and cover with aluminum foil.
  7. Bake for about 1 hour, or until the pumpkin is tender.
  8. Remove the foil and bake for an additional 15-20 minutes to brown the top.
  9. Serve warm and enjoy!
