Ingredients

  • 1 lb lean ground beef (or ground turkey)
  • 1/2 cup breadcrumbs (Italian style or plain)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cranberry sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, minced garlic, salt, and pepper. Mix until just combined.
  3. Shape the mixture into approximately 1-inch meatballs, about 20 pieces, and place evenly spaced on the baking sheet.
  4. Bake for 15 minutes, turning halfway through until golden brown and fully cooked.
  5. While meatballs bake, combine cranberry sauce, apple cider vinegar, brown sugar, and Dijon mustard in a small saucepan over medium heat. Stir until the sugar dissolves and the sauce thickens, about 5 minutes.
  6. Toss the baked meatballs with the warm cranberry sauce, then return to the oven for another 5 minutes.
  7. Serve warm with toothpicks or over a bed of rice or noodles.
