- 1 lb lean ground beef (or ground turkey)
- 1/2 cup breadcrumbs (Italian style or plain)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cranberry sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar or honey
- 1 tablespoon Dijon mustard
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, minced garlic, salt, and pepper. Mix until just combined.
- Shape the mixture into approximately 1-inch meatballs, about 20 pieces, and place evenly spaced on the baking sheet.
- Bake for 15 minutes, turning halfway through until golden brown and fully cooked.
- While meatballs bake, combine cranberry sauce, apple cider vinegar, brown sugar, and Dijon mustard in a small saucepan over medium heat. Stir until the sugar dissolves and the sauce thickens, about 5 minutes.
- Toss the baked meatballs with the warm cranberry sauce, then return to the oven for another 5 minutes.
- Serve warm with toothpicks or over a bed of rice or noodles.
