- 8 ounces of pasta (fettuccine or spaghetti)
- 2 tablespoons of unsalted butter
- 4 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain the pasta.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute or until fragrant, being careful not to burn it.
- Pour in the heavy cream and stir to combine. Bring it to a gentle simmer, then reduce the heat. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
- Add the drained pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency. Season with salt and pepper to taste.
- Remove from heat and serve immediately, garnished with fresh parsley if desired.
Notes
For added flavor, consider sautéing mushrooms or spinach, or adding cooked chicken or shrimp for protein. A hint of red pepper flakes can spice it up!
