- 1 box of pistachio cake mix
- 1 can crushed pineapple, drained
- 3 large eggs
- 1/2 cup vegetable oil

- 1 cup chopped pistachios

Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Combine the pistachio cake mix, drained crushed pineapple, eggs, vegetable oil, and vanilla extract in a large bowl. Mix until well combined.
- Fold in the chopped pistachios gently.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- Frost the top with cream cheese frosting and sprinkle additional chopped pistachios on top if desired.
- Cut into squares and serve.
