Ingredients

  • 1 cup unsalted pistachios, shelled
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons gelatin
  • 1/4 cup water
  • 1 cup chocolate chips
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Begin by blending the pistachios in a food processor until finely ground.
  2. In a bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
  3. In a saucepan, combine 1 cup heavy cream, sugar, and vanilla extract. Heat until just simmering.
  4. Stir in the bloomed gelatin until dissolved.
  5. Fold in the ground pistachios and let the mixture cool.
  6. Whip the remaining 1 cup of heavy cream to soft peaks and gently fold into the pistachio mixture.
  7. Pour into serving dishes and refrigerate for at least 2 hours.
  8. For the ganache, heat 1/2 cup heavy cream and pour over chocolate chips. Stir until smooth.
  9. Once the mousse is set, pour the ganache on top and serve chilled.

Notes

For a unique twist, try adding flavored extracts like rose or orange blossom. Garnish with additional pistachios or a drizzle of caramel.
