- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 1 package (3.4 oz) pistachio instant pudding mix
- 1 cup milk
- 1 cup whipped topping
- ½ cup powdered sugar
- 1 cup chopped pistachios (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the crushed graham crackers and melted butter. Press this mixture into the bottom of a greased 9×9 inch baking dish to form the crust.
- Bake the crust for about 10 minutes, then let it cool completely.
- In another bowl, whisk together the pistachio pudding mix and milk until thickened.
- In a separate bowl, mix the whipped topping and powdered sugar until combined.
- Carefully fold the whipped topping mixture into the pistachio pudding until smooth.
- Spread the pistachio cream filling over the cooled crust evenly.
- Refrigerate for at least 4 hours or until set.
- Before serving, top with chopped pistachios for added crunch.
- Cut into bars and enjoy!
Notes
For a gluten-free option, use gluten-free graham crackers. You can also enhance the flavor with a splash of almond extract.
