- 1 cup pistachio nuts, shelled and chopped
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the chopped pistachios and the white chocolate chips if using them.
- Spread the batter evenly in the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan before slicing into bars.
- Dust with powdered sugar before serving if desired.
Notes
For an extra burst of flavor, consider toasting the pistachios lightly before chopping them. Store bars in an airtight container at room temperature for up to three days.
