Description

A delightful, tropical no-bake dessert featuring creamy layers of pineapple, coconut, and a hint of rum, perfect for warm weather gatherings.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 can sweetened condensed milk
  • 2 cups crushed pineapple, drained slightly
  • 1/4 cup pineapple juice
  • 1/4 cup coconut rum
  • 2 cups whipped topping
  • 2 cups shredded coconut
  • Maraschino cherries (for garnish)

Instructions

  1. Mix the graham cracker crumbs with melted butter until fully combined. Press the mixture into the bottom of a 9×13-inch dish to form a firm crust.
  2. Chill the crust for 15–20 minutes to set.
  3. Combine the sweetened condensed milk, crushed pineapple, pineapple juice, and coconut rum in a mixing bowl.
  4. Fold in the whipped topping and half of the shredded coconut until everything is well mixed.
  5. Spread the filling evenly over the chilled crust, followed by a sprinkle of the remaining shredded coconut on top.
  6. Refrigerate the assembled dessert for at least 180–240 minutes, allowing it to firm up properly.
  7. Garnish each slice with a Maraschino cherry before serving.

Notes

To keep fresh, store covered in the refrigerator for up to five days. For longer storage, freeze individual slices wrapped in plastic wrap.
