- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 can sweetened condensed milk
- 2 cups crushed pineapple, drained slightly
- 1/4 cup pineapple juice
- 1/4 cup coconut rum
- 2 cups whipped topping
- 2 cups shredded coconut
- Maraschino cherries (for garnish)
Instructions
- Mix the graham cracker crumbs with melted butter until fully combined. Press the mixture into the bottom of a 9×13-inch dish to form a firm crust.
- Chill the crust for 15–20 minutes to set.
- Combine the sweetened condensed milk, crushed pineapple, pineapple juice, and coconut rum in a mixing bowl.
- Fold in the whipped topping and half of the shredded coconut until everything is well mixed.
- Spread the filling evenly over the chilled crust, followed by a sprinkle of the remaining shredded coconut on top.
- Refrigerate the assembled dessert for at least 180–240 minutes, allowing it to firm up properly.
- Garnish each slice with a Maraschino cherry before serving.
Notes
To keep fresh, store covered in the refrigerator for up to five days. For longer storage, freeze individual slices wrapped in plastic wrap.
