- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 1/2 cup brown sugar
- 1/2 cup rolled oats
- 1/2 cup flour
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla until combined and smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; don’t overmix! Fold in the blueberries carefully.
- For the streusel topping, combine the brown sugar, rolled oats, flour, and cinnamon in a small bowl. Add the melted butter and mix until the mixture resembles crumbles.
- Divide the muffin batter among the muffin cups, and then generously sprinkle the streusel topping over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
Notes
Serve warm for the best experience. A light dusting of powdered sugar or a drizzle of honey can enhance sweetness.
