Description

Delicious blueberry muffins with a crunchy streusel topping, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup flour
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla until combined and smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; don’t overmix! Fold in the blueberries carefully.
  5. For the streusel topping, combine the brown sugar, rolled oats, flour, and cinnamon in a small bowl. Add the melted butter and mix until the mixture resembles crumbles.
  6. Divide the muffin batter among the muffin cups, and then generously sprinkle the streusel topping over each muffin.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving.

Notes

Serve warm for the best experience. A light dusting of powdered sugar or a drizzle of honey can enhance sweetness.
