Ingredients

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup chocolate chips
  • 1/2 teaspoon peppermint extract
  • Crushed peppermint candies (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, melt the butter. Mix in the sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and peppermint extract.
  4. In another bowl, combine the flour, cocoa powder, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the chocolate chips.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  8. Allow to cool completely before topping with crushed peppermint candies. Cut into squares and serve.

Notes

For a gluten-free version, use gluten-free all-purpose flour. Using quality chocolate chips will enhance the flavor.
