Instructions

- In another bowl, combine the buttermilk, egg, and melted butter; whisk until smooth.

- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- For the berry compote, heat mixed berries in a saucepan until softened; sweeten lightly with sugar if desired.
- Serve the pancakes topped with the warm berry compote and a drizzle of maple syrup.
