Ingredients

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Mixed berries (strawberries, blueberries, raspberries) for compote
  • Maple syrup (optional) for serving

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, and melted butter; whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. For the berry compote, heat mixed berries in a saucepan until softened; sweeten lightly with sugar if desired.
  7. Serve the pancakes topped with the warm berry compote and a drizzle of maple syrup.

Notes

Allow the batter to rest for 5 minutes for fluffier pancakes. Customize with chocolate chips or nuts for added flavor.
