Delicious Oven-Baked Chicken Taquitos with a crispy exterior and savory chicken filling, perfect for family dinners or gatherings.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil (for cooking chicken)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup salsa
  • 1/4 cup shredded cheddar cheese, plus more for topping
  • 16–20 small corn tortillas (6-inch)
  • 2 tbsp olive oil (for brushing taquitos)
  • Optional toppings: Sour cream, Guacamole, Salsa, Chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the chicken breasts until fully cooked, about 15-20 minutes. Shred the chicken or dice it if preferred.
  3. Heat 1 tablespoon of olive oil in a skillet, add onion, and cook until softened, about 5 minutes. Add garlic and cook for another minute.
  4. Add the chicken back to the skillet, sprinkle with taco seasoning, pour in chicken broth, and add salsa. Simmer for 5-7 minutes until slightly thickened.
  5. Remove from heat and stir in 1/4 cup shredded cheddar cheese until melted.
  6. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 30-60 seconds.
  7. Place 2-3 tablespoons of chicken filling in each tortilla and roll tightly, seam-side down on a baking sheet.
  8. Brush each taquito with olive oil for a crispy texture.
  9. Bake for 15-20 minutes until golden brown and crispy.
  10. Let cool for a few minutes before serving.

Notes

For added spice, consider including jalapeños in the filling or using a mix of cheeses for extra flavor. Serve with fresh salsa, guacamole, or sour cream.
