Description

A convenient and flavorful one pan dish that combines tender steak, vibrant bell peppers, and hearty rice, perfect for busy weeknight dinners.

Ingredients

Scale
  • 1 lb flank steak, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 2 tablespoons fajita seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lime wedges and cilantro for serving

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the sliced steak. Season with salt, pepper, and fajita seasoning, then cook until browned.
  3. Remove the steak and set aside.
  4. In the same skillet, add the sliced onion and bell pepper. Sauté until softened.
  5. Add the uncooked rice and stir for 1 minute to incorporate the flavors.
  6. Pour in beef broth, bring to a boil, then reduce heat to low.
  7. Return the steak to the skillet. Cover and simmer for 20 minutes, or until the rice is fully cooked.
  8. Fluff the rice and serve with lime wedges and cilantro for a vibrant finish.

Notes

For a twist, consider using chicken or shrimp instead of flank steak, or try quinoa or cauliflower rice for a lower-carb alternative.
