- 2 cups almond flour
- 1/4 cup coconut oil, melted
- 2 tablespoons honey or sugar substitute
- 2 cups cream cheese, softened
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
- 1/4 cup sweetener of choice
- 1 egg
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, melted coconut oil, and honey or sugar substitute. Press into the base of a greased baking pan.
- Bake the crust for 10 minutes until lightly golden.
- In another bowl, mix the softened cream cheese, Greek yogurt, vanilla extract, sweetener, egg, and lemon juice until smooth.
- Pour the cheesecake filling over the baked crust and smooth the top.
- Bake for an additional 25-30 minutes until the center is set but slightly jiggly.
- Let it cool completely, then refrigerate for at least 2 hours before cutting into bars.
- Serve chilled and enjoy!
Notes
For a nut-free version, replace almond flour with oat flour or gluten-free all-purpose flour. Experiment with sweeteners to suit your taste.
