- 1 lb Ground Beef (85% lean)
- 2 tbsp Olive Oil (Extra-virgin preferred)
- 1 medium Onion (Yellow, diced)
- 3 cloves Garlic (Freshly minced)
- 2 medium Zucchini (Firm, skin on preferred)
- 1 medium Red Bell Pepper (Sweet, diced)
- 1 cup Cherry Tomatoes (Halved)
- 1/2 cup Kalamata Olives (Rinsed)
- 1 tsp Dried Oregano (Rubbed)
- 1 tsp Cumin (Toasted briefly)
- 1 tsp Paprika (Toasted briefly)
- 1/2 cup Feta Cheese (Crumble)
- 1/4 cup Parsley (Flat-leaf, chopped)
- 1 tbsp Lemon Juice (Freshly squeezed)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic, cooking until the onion becomes translucent.
- Incorporate the ground beef. Break it apart using a wooden spoon and cook until browned.
- Stir in the diced zucchini and red bell pepper, cooking for another few minutes until they soften.
- Add the halved cherry tomatoes and Kalamata olives to the pan along with the dried oregano, cumin, and paprika. Stir well to combine.
- Remove the skillet from the heat. Fold in the crumbled feta cheese, chopped parsley, and freshly squeezed lemon juice for that extra burst of flavor.
Notes
For a vegetarian option, replace the ground beef with chickpeas or lentils. You can also add diced jalapeños for some heat.
