Description

A vibrant stir fry featuring spiced ground beef, fresh vegetables, and tangy feta cheese, perfect for busy weeknight dinners.


Ingredients

  • 1 lb Ground Beef (85% lean)
  • 2 tbsp Olive Oil (Extra-virgin preferred)
  • 1 medium Onion (Yellow, diced)
  • 3 cloves Garlic (Freshly minced)
  • 2 medium Zucchini (Firm, skin on preferred)
  • 1 medium Red Bell Pepper (Sweet, diced)
  • 1 cup Cherry Tomatoes (Halved)
  • 1/2 cup Kalamata Olives (Rinsed)
  • 1 tsp Dried Oregano (Rubbed)
  • 1 tsp Cumin (Toasted briefly)
  • 1 tsp Paprika (Toasted briefly)
  • 1/2 cup Feta Cheese (Crumble)
  • 1/4 cup Parsley (Flat-leaf, chopped)
  • 1 tbsp Lemon Juice (Freshly squeezed)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion becomes translucent.
  3. Incorporate the ground beef. Break it apart using a wooden spoon and cook until browned.
  4. Stir in the diced zucchini and red bell pepper, cooking for another few minutes until they soften.
  5. Add the halved cherry tomatoes and Kalamata olives to the pan along with the dried oregano, cumin, and paprika. Stir well to combine.
  6. Remove the skillet from the heat. Fold in the crumbled feta cheese, chopped parsley, and freshly squeezed lemon juice for that extra burst of flavor.

Notes

For a vegetarian option, replace the ground beef with chickpeas or lentils. You can also add diced jalapeños for some heat.
