Instructions
- Preheat your oven to 400°F and lightly grease a medium baking dish.
- Heat olive oil in a skillet over medium heat. Sauté the minced garlic for about 1 minute until fragrant.
- Add the cherry tomatoes and baby spinach to the skillet. Cook until the spinach has wilted, stirring occasionally.
- Stir in the heavy cream, cream cheese, grated Parmesan, Italian seasoning, paprika, and red pepper flakes if you choose to use them. Allow the mixture to simmer for 3-4 minutes until slightly thickened.
- Arrange the shrimp in a single layer in the baking dish and season them with salt and black pepper.
- Pour the creamy sauce evenly over the shrimp and gently toss to ensure they are well coated.
- Sprinkle the shredded mozzarella cheese over the top and bake uncovered for 12-15 minutes, until the shrimp turn pink and the cheese is bubbly and lightly golden.
