- 4 salmon fillets (skin-on)
- 1 cup orzo
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 2 cups chicken or vegetable broth
- 1 lemon (juice and zest)
- 1 tbsp butter
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the salmon with salt and pepper. Sear the salmon skin-side down for 3-4 minutes, then flip and cook for another 2-3 minutes. Remove the fillets and set aside.
- In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté for 30 seconds. Add the orzo and toast for 1-2 minutes.
- Pour in the chicken or vegetable broth and lemon juice. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until orzo is tender and creamy.
- Return the salmon to the skillet, nestling it into the orzo. Simmer together for 2 minutes, then finish with lemon zest and fresh parsley on top.
Notes
For the best results, use a digital thermometer to check the salmon’s internal temperature, aiming for 125°F for medium. This dish can also incorporate fresh herbs or vegetables for added flavor.
