  • ¼ cup fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon lemon extract (optional)
  • Yellow food coloring (optional, 2-3 drops)
  • ½ cup powdered sugar, for coating

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  2. Using an electric mixer, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
  3. Mix in the eggs one at a time, then add the lemon zest, lemon juice, vanilla extract, lemon extract, and yellow food coloring.
  4. Slowly add the dry ingredients to the wet mixture, blending just until combined.
  5. Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours.
  6. Once chilled, roll the dough into bite-sized balls and coat each ball with powdered sugar.
  7. Preheat your oven to 350°F (175°C) and bake the cookies for 10-12 minutes, until the edges are set but the centers remain slightly soft.
  8. Transfer them to a wire rack to cool completely.
