- 1 teaspoon pure vanilla extract
- ½ teaspoon lemon extract (optional)
- Yellow food coloring (optional, 2-3 drops)
- ½ cup powdered sugar, for coating
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
- Using an electric mixer, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
- Mix in the eggs one at a time, then add the lemon zest, lemon juice, vanilla extract, lemon extract, and yellow food coloring.
- Slowly add the dry ingredients to the wet mixture, blending just until combined.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours.
- Once chilled, roll the dough into bite-sized balls and coat each ball with powdered sugar.
- Preheat your oven to 350°F (175°C) and bake the cookies for 10-12 minutes, until the edges are set but the centers remain slightly soft.
- Transfer them to a wire rack to cool completely.
