- 1 lb beef (chuck or brisket), cut into chunks
- 4 cups beef broth
- 3 cups noodles (any type, e.g., egg noodles, ramen)
- 1 onion, sliced
- 2 carrots, sliced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- Salt and pepper, to taste
- Green onions, for garnish
Instructions
- In a large pot or slow cooker, combine the beef with the beef broth, sliced onion, carrots, bell pepper, minced garlic, grated ginger, soy sauce, and gochujang.
- Let the mixture cook on low for 6 to 8 hours, or until the beef reaches a tender perfection.
- About 30 minutes before serving, introduce the noodles to the pot. Stir gently to ensure even cooking.
- Once the noodles are perfectly cooked, season with salt and pepper to taste.
- Serve hot, garnished with freshly chopped green onions for an added pop of flavor and color.
Notes
For added flavor, sear the beef before adding it to the pot. This dish can be made vegetarian by substituting beef with firm tofu and using vegetable broth.
