Delicious and fluffy baked chicken ricotta meatballs that are easy to prepare and packed with flavor.


Ingredients

  • 1 pound Ground chicken
  • 1 cup Ricotta cheese
  • 1 large Egg
  • 1/2 cup Breadcrumbs
  • 2 cloves Garlic, minced
  • 1/4 cup Onion, grated
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup Fresh parsley or basil, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Spinach
  • 1/2 teaspoon Crushed red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground chicken, ricotta cheese, and egg until well-blended. Incorporate the breadcrumbs, minced garlic, grated onion, and grated Parmesan cheese.
  3. Add in the chopped parsley or basil, Italian seasoning, salt, black pepper, spinach, and crushed red pepper flakes. Mix until everything is evenly distributed.
  4. Shape the mixture into golf ball-sized meatballs and place them on a baking sheet lined with parchment paper.
  5. Bake the meatballs for approximately 20-25 minutes or until they are cooked through and golden brown.

Notes

For added flavor, consider searing the meatballs in a pan for 2-3 minutes on each side before baking.
