Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, chopped
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 tablespoons Hungarian paprika
  • 1 teaspoon caraway seeds
  • 4 cups beef broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, chopped bell peppers, and sliced carrots. Cook for an additional 3-4 minutes until the vegetables soften.
  4. Toss in the beef cubes, browning them on all sides.
  5. Sprinkle in the paprika and caraway seeds over the meat and vegetables. Stir well to coat everything in the spices.
  6. Pour in the beef broth, then add the diced potatoes.
  7. Season with salt and pepper to taste. Bring the mixture to a boil.
  8. Reduce the heat to low and let it simmer for about 90 to 120 minutes, or until the beef is tender.
  9. Serve hot, garnished with fresh parsley.

Notes

Browning the beef thoroughly at the start adds a deep flavor. Consider adding a splash of red wine during simmering for extra complexity.
