- 1 medium butternut squash, peeled and cubed
- 1 cup fresh cranberries (or dried cranberries)
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cinnamon
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper for easy cleanup.
- Peel the butternut squash, then cut it into 1-inch cubes and place in a large mixing bowl.
- Pour cranberries, honey, olive oil, salt, pepper, and cinnamon into the bowl.
- Toss everything together until the squash is evenly coated with the sweet and spicy mixture.
- Pour the mixture onto the prepared baking sheet, spreading out in a single layer.
- Roast for 30-35 minutes, or until the squash is tender and caramelized.
- Carefully remove from the oven and gently toss the mixture before sprinkling feta cheese over the top.
- Return to the oven for 3-5 minutes, until feta is warmed.
- Remove from the oven and sprinkle with chopped parsley before serving.
Notes
For added texture, serve over arugula or with toasted nuts. Can substitute with goat cheese or omit for a dairy-free option.
