Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 cup fresh cranberries (or dried cranberries)
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cinnamon
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper for easy cleanup.
  3. Peel the butternut squash, then cut it into 1-inch cubes and place in a large mixing bowl.
  4. Pour cranberries, honey, olive oil, salt, pepper, and cinnamon into the bowl.
  5. Toss everything together until the squash is evenly coated with the sweet and spicy mixture.
  6. Pour the mixture onto the prepared baking sheet, spreading out in a single layer.
  7. Roast for 30-35 minutes, or until the squash is tender and caramelized.
  8. Carefully remove from the oven and gently toss the mixture before sprinkling feta cheese over the top.
  9. Return to the oven for 3-5 minutes, until feta is warmed.
  10. Remove from the oven and sprinkle with chopped parsley before serving.

Notes

For added texture, serve over arugula or with toasted nuts. Can substitute with goat cheese or omit for a dairy-free option.
