Ingredients

  • 2 cups cooked lobster meat, chopped
  • 4 cups seafood broth
  • 2 cups heavy cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups potatoes, diced
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chives or parsley for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onions and garlic, sautéing until the onions become translucent.
  2. Incorporate the diced potatoes and cook for about 5 minutes, stirring occasionally.
  3. Pour in the seafood broth, bringing the mixture to a boil. Reduce heat and let it simmer until the potatoes are tender, which should take around 15 minutes.
  4. Stir in the heavy cream, corn, and chopped lobster meat.
  5. Season with thyme, salt, and pepper. Allow to simmer for an additional 5-10 minutes, mixing well to combine the flavors.
  6. Adjust seasoning to taste before serving.
  7. Serve hot, garnished with fresh chives or parsley for a bright finish.

Notes

Use fresh ingredients for the best flavor. For a creamier texture, blend some of the potatoes into the broth before adding lobster.
