Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 1 cup green beans, trimmed and cut
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions, carrots, and celery. Sauté for about 5 minutes, or until softened.
  3. Stir in the garlic, zucchini, bell pepper, and green beans. Cook for another 3-4 minutes, allowing the flavors to blend.
  4. Pour in the vegetable broth and diced tomatoes, bringing the mixture to a boil.
  5. Add the thyme, basil, salt, and pepper. Reduce the heat and allow to simmer for 20 minutes, letting the flavors deepen.
  6. Stir in the spinach or kale and cook until just wilted.
  7. Adjust seasonings if necessary and serve hot.

Notes

Garnish with fresh herbs or a drizzle of olive oil. Serve with crusty bread or a light salad.
